chicken parmesan soup recipe via Pampered Chef online party

I could not WAIT to get up to my studio this morning, open the window, and comfortably wear my robe and wool socks.  That first day of the fall season where I put on those comfy, warm socks is one of my most favorite days of the year!  It also means that it is soup season around West Street Story.

I love making soups, stews, and chili.  Not only are they soup-er easy {ha!}, on a cold brisk fall day, nothing is better.  Graham loves a good soup {or warm casserole} after working outside all day on farms, and his favorites are those that he feels “sticks to his ribs”.  This recipe, courtesy of Pampered Chef, is just that!

But, before I share this tasty {and easy} recipe, let me back up for one moment.  One of my high school friends, Janica, is currently working towards a few awards and recognitions with Pampered Chef.  Her ultimate goal is to stay at home with her two little boys and work her Pampered Chef business full-time.  When she asked me to host an online party, of course I said yes!  For being a host, I received this wonderful recipe collection book for the fall/winter 2012 season.  That is where I found this soup recipe which I am sharing with you all today!

Now, onto the recipe!  This Chicken Parmesan soup is made in the Pampered Chef Deep Covered Baker and entirely in the microwave {say, what?!?!}.  When I asked Janica what HER number one, most used, most loved product was, the Deep Covered Baker was her answer.  I love that it can go from the microwave to the oven.  Along with this recipe for Chicken Parmesan Soup, there is actually an entire cookbook filled with recipes that you can make right in this Deep Covered Baker, all ready in under 30 minutes or less!

This particular soup recipe also boasts a $2 cost.  Feed your family for around $2 per serving!

Pampered Chef’s Chicken Parmesan Soup

Ingredients

  • 1/4 of a 16-oz loaf French bread
  • 2 tbsp olive oil
  • 3 tbsp Garlic and Herb Rub, divided
  • 1 1/2 cups unsalted chicken stock
  • 2 cups marinara sauce
  • 1 can (14.5 oz) diced tomatoes with garlic and onion, undrained
  • 2 1/2 cups diced cooked chicken breasts
  • 3 garlic cloves
  • 1 oz fresh Parmesan cheese
  • 3/4 cup shredded mozzarella cheese, divided

Directions

1.  Cut bread into 3/4 inch cubes using the Color Coated Bread Knife.  You should have about 2 cups of cubes when finished.

2.  Toss bread cubes, oil, and 1 tbsp of the rub into the Deep Covered Baker.

3.  Microwave bread cubes, uncovered, on HIGH 3-4 minutes or until they begin to brown {stirring every minute}.  Spread croutons over a piece of parchment paper to cool.

4.  Stir stock, remaining 2 tbsp rub, marinara sauce, tomatoes, chicken, and garlic pressed with the Garlic Press into the baker.

5.  Microwave, covered, on HIGH 11-13 minutes or until soup is hot.

6.  Grate Parmesan using Microplane Adjustable Fine Grater.

7.  Carefully remove baker from microwave and stir in Parmesan.

8.  Top soup with half of the mozzarella and sprinkle with half of the croutons.  Top with remaining mozzarella.

9.  Let stand, covered, 2-3 minutes or until cheese is melted.  Serve soup with remaining croutons.

Pampered Chef’s Cook Tips

  • Garlic Oil can be substituted for the olive oil, if desired
  • Unsalted stock was used in this recipe because it is a fast and easy way to give the soup concentrated chicken flavor without adding too much salt
  • Croutons can be stored at room temperature in an airtight container or resealable plastic bag for 3 to 5 days.  Make extra and save them for leftover soup or a salad!
