If you have ever appreciated the expression, “Done is better than perfect” then you are going to love what The Hollow Road now has in store as we are going to be following this mantra a little more closely. I’ve been neglecting getting new recipes and blog posts up simply because I was waiting for everything to be perfect – to have the perfect Pinterest-worthy photos to use, to have the most cleverly written blog post, to have all my SEO tidy, and on and on.

But, I’ve been fielding a lot of comments where people are looking for updates or certain recipes. One most notably is the Chili Tots Freezer Recipe that I was making when I put together my blog post featuring freezer meal tips and tricks. So here it is, plain and simply! Next time we make this as a family, I’ll snap some pictures and add them to the post. Until then, just enjoy the recipe in all its imperfect blog post glory.

Chili Tots Casserole Freezer Meal


  • 1 lb. ground beef
  • (2) 15 oz. cans chili (with or without beans)
  • (1) 8 oz can tomato sauce
  • (1) 4 oz can chopped green chilis
  • (2) cups shredded cheddar cheese
  • (1) 32 oz package frozen tater tots


  1. Brown beef in large skillet, drain.
  2. Stir in chili, tomato sauce, and green chilis.
  3. Transfer to greased 9x13 casserole dish.
  4. Sprinkle casserole with shredded cheddar cheese.
  5. Top casserole with tater tots.
    Cover with tinfoil and bake at 350 degrees for 35-40 minutes, or until heated through.
    Cover and freeze for up to 3 months.
    Remove from freezer 30 minutes prior to baking (do not completely thaw). Cover with tinfoil and bake at 350 degrees for 60-75 minutes, or until heated through.

    In your blog post about freezer meals you mentioned that this recipe originally had olives that youleVe out. We like olives at our house, would you mind telling us how they were used in the original recipe?

      I no longer have a copy of the original recipe, but I’m thinking it was maybe a regular sized can (something like 15 oz.) of sliced olives added. If you give it a try, let me know!
