{grandma’s recipes} freezer sweet corn

Not too long ago I shared with you one of the recipe’s from Graham’s grandmother’s recipe box. Although I have plenty more of her recipes to share {stay tuned!}, today I have a recipe from my grandmother! Grandparents give us so many joys like this, yet we often overlook showing them our appreciation. This is why gift baskets for grandparents are such a great way to show our care and affection.

This freezer corn is fought after in my family. Anytime it is available, you better get it on your plate fast because otherwise it is gone in a flash. I can distinctively remember a time when my mom was so sad when she realized she had just eaten the last Cool-Whip container from her freezer….and it was February….with a couple of feet of snow on the ground {and no signs of fresh-from-the-garden sweet corn coming anytime soon}. I asked my grandma to write out the recipe for her freezer corn for me and she was kind enough to do so. Graham took the liberty of getting it laminated!

Now that sweet corn season is here, make sure to save some of your cobs for this freezer goodie. You will not be sorry!

{I found that one cob of corn equaled about one cup of kernels}

Grandma M’s Freezer Corn

Ingredients:

8 cups corn cut off the cob

1 cup water

1 T. salt {optional….see Grandma’s tidbit below}

1 T. sugar

1/4 cup butter

Directions

Melt butter in pot then add water and sugar.

Add corn and boil for 3 minutes.

Cool in cake pans and then package for freezer {my family seems to like to use Cool-Whip containers so that you can easily reheat the corn, but ziploc bags will work just as well}

Extra tidbit from Grandma, “I’ve found that if you add the salt when cooking, the corn becomes tough. I add my salt and pepper when I bring it to a boil to eat.”
